This book will for once and for all quell the doubts that many of us have whether one can cook traditional Indian food in olive oil. Yes of course you can. And nobody will notice any change in the taste. Just go for it and enjoy the taste with good health.. It was an enlightening experience writing these recipes for this book – Cooking with Olive Oil. My tryst with olive oil began way back in 1989 when I was posted as the Executive Chef of an Indian Restaurant in New Zealand that served international food too. All the food was cooked in a common kitchen, and being the executive chef I was responsible for the kitchen inventory. I discovered that the consumption of olive oil was quite large. And that was because the Indian cooks were using it too. The fact that there was no resistance from the patrons proved that the food did not taste any different cooked in olive oil Now knowing that olive oil is the best oil for maintaining good health even at home we have switched to cooking in olive oil. Be it Palak Shorba or Tandoori Murgh Chaat, Dahi Baingan or Mirchi ka Salan, Kozhi Vartha Kari or Fish Ambotik, Kathal ki Biryani, Thepla, Kali Dal, Punjabi Kadhi, Balushahi or Besan ke Laddoo…you can cook them all to perfection in these teaspoons of liquid gold.
